Illy Coffee

Finally, I’ve given in and bought this coffee. I am just curious why a lot of vlogs I watch has this brand of coffee. Aside from its cute coffee maker, some of them just use this brand’s ground coffee.

I only drink coffee on my rest days. It is a treat for me. I’ve tried buying coffee from local shops but it wasn’t as good as when I prepare it myself. I used to do the french press method but coffee I made through that makes me dizzy. I tried the drip method and it doesn’t have that effect on me. But with the drip method, I just follow my instinct.

I like my coffee medium with a bit of sweetness.

I used to drink instant coffee. I started drinking as young as 5 or 6. I would even pour it over rice. Then I was introduced to ice blended coffee–mocha is my favorite. The best iced blended mocha I’ve had was at Coffee Bean and Tea Leaf. It has the perfect taste of a mocha for me.

I also drink our local coffee–Batangas coffee or kapeng barako. I used to enjoy the smell of coffee bean being grinded in the market. Batangas coffee has a fruity taste. I love it because its taste is home to me.

Moving to Australia, I got introduced with different kinds of coffee. But I don’t really like milk in my coffee so I only tried long black and mocha (although it still has milk in it). Over the years, I find coffee shop mocha and long black really bitter so I stopped buying coffee from coffee shops.

Moving back to the point of this post, Illy is on the pricey side. I could buy other brands for AU$15 a kilo (half price) but this is around the same price just for 250 g.

It is in a tin can and sealed. I put a few spoonfuls on my filter and add hot water and I could see bubbles. I knew that despite it being in a tin can, and grounded, it is still fresh.

The taste? It is smooth and velvety. Usually, if I leave my filter in my cup it would be too bitter for my liking right away, but this one is just right. I was even able to drink the next cup. It didn’t taste too acidic at all.

Am I going to buy this brand again? Definitely.

If you know any other brand that is better than this let me know. I am curious to try it.

Sydney Weekend

I went to Sydney last week and I had a great time despite physical exhaustion.  I had 20,000 steps because I was busy exploring parts of Sydney I haven’t been to yet.  It has been fun.  And now I am back in the bush with all the Filipino ingredients I can carry.

I was craving for meat a while ago so I decided to cook adobo.


Since I used pork, I had it boiled first to make the meat tender.  After that I just added enough soy sauce then after a few minutes, I added vinegar and black pepper and bay leaf.  Adjust the taste with a soy sauce or vinegar.

Baked Ziti

“See you at church!” I excitedly told one of my regular customers.  I was excited to see them at church friday night.  However, someone needed my help that was why I missed church night.

My usual friday night consists of ordering my dinner at Freckles.  I always order its pasta for the night.  Then I go to church.  Baradine is just a small place so I either know them by name now and all faces are already familiar.

I missed church so I decided to just head on to my next friday night activity–dinner.  I called Freckles to order my pasta but last night, they had no pasta.  So I just decided to cook my own pasta.

So presenting my very own baked ziti 🙂

It was yum.  I don’t have ricotta cheese but the one I bought have four cheese all grated.  They blended so well.  Now, I have enough food for the week. 🙂


I have finally worked out a plan on how to go about my calorie restriction.  And it involves healthy, real food. 🙂  However, for the past few weeks, I have been stress eating.  That was why last night I really had to sit down and work out my menu for the following months or else my clothes/dress wouldn’t fit me and I wouldn’t have anything pretty to wear on my cousin’s wedding.

The best lunch/dinner I’ve had here so far.  With the barbecue parties I’ve been at here, I have learned to appreciate the different salads that go well with sausage (snag) and steak (barbecue).  But if I were to do it, if I wouldn’t cook rice, I would just boil or microwave potato and sweet potato and that’s it–substitutes for rice.

I’ve also discovered that canned pineapples and sweet corn are available here.  So all is well.

Adobo Version 2

Here in the country, there isn’t much restaurant in town.  So I have to do what I got to do to survive–cook.  And one of the easy dishes to cook is adobo.  With the help of Mama Sita’s ready mix, I made adobo almost instantly.

The taste is alright but if you want to do the sauce from scratch, you need soy sauce, vinegar, garlic, and pepper for this.  Saute the garlic until golden brown, add the chicken, stir fry them until cooked, add a bit of soy sauce and vinegar and a little pepper.  Adjust the taste if you want it salty, add more soy sauce and if you want it sour, add more vinegar.  You can also make it chili by adding some chili sauce. 🙂

This dish goes best with rice. 🙂

Koko Black

It is the place of my favorite hot chocolate.  It clearly beats Jollibee and Starbucks.  Every sip is heaven with its creaminess, it really feels like drinking a chocolate bar.  So good!

But too bad, I am here in the bush and that means no Koko Black.  But should I wallow in self-pity?  No.  I am here for a greater reason–a very good reason.  I would always choose to go to this place if I were to live my life again.  But of course, there is no reincarnation only resurrection. 🙂  So I decided to make my own hot chocolate and here it is:

According to one of the Koko Black staff, all I had to do was warm the milk and add chocolate shavings.  And that is what I did.  Only, I didn’t really shave the chocolate.  I just put it in cubes.  It still melted though so it’s all good. 🙂

Wow, now that I am here in the bush, I realized that I have so many things that I can do.  So many projects that I can accomplish.  By God’s power and grace, I will do the best I can with this life of mine. 🙂

I had a serious reflection last weekend and I realized that I was slowly backsliding.  Scary!  But it happens subtly.  We would not really realize it until we were at the bottom.  This song touched me while we were singing this at church.

I pray never to leave God’s arms 🙂

I had the dill salmon with lots o cheese!!!  My friend ordered vegetarian pizza.  The pasta was filling and nice enough.  I would like to have something like this in Tamworth aside from the usual steak place.  I love pasta! 🙂

Sun and Moon

This was my view on my way to the “mall” (it’s more of like a grocery) and back.


It’s a quiet place except for the mating birds and insects and dogs barking in the distance.  I said to myself, “This place is beautiful…” but then it would even be more beautiful if all of my loved ones are here.  But then if all my loved ones are here, living in one community, then this must be HEAVEN.  Because that’s what heaven is like–living in a community with GOD and all our loved ones.

Anyway, I went to the grocery store because the chicken I bought the other day was still frozen and I wanted to eat meat and so I decided to just buy new chicken.  Lazy @**! 🙂

On my way back to the unit, this was my view.


I could see our unit from here.  The moon was already up although it was a little short of 16 minutes from sunset.  It’s spring that’s why. The mountain was seen from anywhere in this place, reminding me of where I am.  This place is really beautiful–this part that is. 🙂


There’s Noodle Bento on West and they serve very nice Malaysian food. They don’t have Hainanese Chicken though. Oh well, I went there yesterday and bought this.


I think this is called Seafood Nasi. They give a big serving. I ate this for yesterday’s lunch and today’s breakfast. 🙂

It should be my goal to try to eat everything on their menu during my whole stay here in this side of NSW.

God has been good to me. Bits and pieces of niceness from people I don’t expect to be kind to me make me think of God’s work in my life. Thank You God.

Convictions and rebuke are God’s discipline. Because He loves me. Like a father disciplining his daughter simply because he loves her.

I am no wiser than I think I am. I just have to obey God. Godly counsel from other people helps. Thank You Lord.

Why I Chose to be a Glutton and Suffered Tonight

There was jasmine rice left, plus that Spam.  But then I was craving for chips (fries), so I decided to drop by Northgate Shopping Centre to buy chips ($3.50) and sweetcorn ($2.20).  I was happily eating chips on my way home.  Then I cooked the corn while eating the spam and rice.  I also drank soda from the fridge.  But then I remembered that I still have some Nescafe Mocha ($3.51 per 10 sachets on sale).  But I remembered that I have to drink my milk (choco milk fortified with Calcium).  So I drank 1 glass (300mg Calcium per 250 ml of milk which is around $2.50 per box) but I would need around 500mg of Calcium so I had to drink another glass.  But this time I was already full.  I told myself that I should not drink anything anymore but I don’t want to go down later just to drink that glass of milk.  So out of laziness, I forced myself to drink that milk.  After that–disaster.  I tried lying on my side just to help my stomach to empty some of its contents, but I could not take it anymore.  I threw up.  There goes my 300mg Calcium.

I would not want to waste all these food but I learned that I should not force myself.  I may gain weight easily but my stomach can only take in as much given a short period of time.  So I should plan what I eat and the amount of it.

Gluttony is not an option.  Gluttony is a sin.  Everything should be in moderation.

I really need to plan my meal now. Hmmm…
